aside from the insane, 355 HP AMG AWD 818c build im thinking about doing just because.....
on the more sane side of things, will a Chevy LTG and its transmission fit in a 818s?

The transmission appears to only have a rear output. So, no.
Engine? Same answer as your AMG engine.

That chevy engine looks possible. Kind of like the ford ecoboost that Factory five is adding to their option list.
The LTG 4-Cylinder 6-speed Manual Transmission is made for a front engine rear drive vehicle.
The design of an 818 is a mid engine as that is what the engineers at factory five determined to be the best performing, lightest, cost effective package.
If I was going with another configuration, I would choose another kit or start from scratch.
