I am going with power steering in my 302 setup.
What belt routing applies in this case? I'm guessing one of these two? and I will need to acquire the A/C delete mounting hardware, yes?

I presume you are keeping the stock pulleys/brackets in your build? If so, then yes, you'll need the Ford Racing A/C delete or an aftermarket equivelant to mount the P/S on the driver's upper where the A/C used to be. Reason being, the p/s in the stock location is too low for the belt from the alt to reach the p/s, as it would rub the top of the water pump pulley and make the stock tensioner inefective.
I don't know what your budget is, but there are several bracket kits out there that will seriously clean up the front of your engine by getting rid of all of the stock cast brackets. March, Summit Racing, Forte, Breeze, etc. all have various brackets in aluminum or steel.

Yes the March is purty but $$$$$ might look at ours for le$$. Alternator / power steering / & pulleys = $360.00

I would go with option 1 get as much wrap on the alt as you can - also after all the belts I have been through I recommend the Goodyear gaterback belts! harder to find not sure why but the tend not to stretch and they grip better - just a personal opinion.

Here is what I got for my 302 from March....you would just get the same kit but with a P/S pulley instead of an Idle Pulley...this shows the same belt routing as your first pic.
