Are there any publications that describe how to rebuild and upgrade 2.5 WRX blocks? 5 Speed trans and upgrades too?

Might want to check out the Haynes manuals for basic re-build info.

The factory service manual is the best way to go on a Subaru. They can be found on various websites, usually for very cheap/free.

I don't think Haynes or Chilton make Subaru (WRX) manuals.

Agree. I haven't been able to find any in either Chilton or Haynes. Doesn't seem to be anything identified as appropriate for the Impreza line for cars newer than 1996. I don't understand that, but that seems to be the way it is.

You can get a PDF of the factory manual on Ebay for about $5.

You can also get a Haynes Legacy service manual, which will get your 90% there for the mechanicals. I went through the same search and got the the Legacy manual.
