so on the dash i have the fan, hazzard, turnsignal, ingition, horn, lights, high beams....am i missing anything? also how would i install the wiring for a accessory power outlet ?

Sounds like you got them all. THe accessory plug depends on what harness you are using. I would sire it using a curcuit that you are not using such as radio power or heat etc. If you have no extra curciuts, you could wire it right from the battery or other source and use an inline fuse.

I have a dash switch for the seat heaters and one for the interior light (under the dash on the passenger's side). I love a dash cluttered with classic toggle switches.

How about your check engine light? Mine had to have it in the circuit for the EFI harness. You can never have enough switches and lights to distract you from driving. Ha-ha. WEK.
