How long should the fuel system maintain the fuel pressure? Mine goes from 40+ to 0 in less than 2-3 min after I shut engine off, seems like t should keep for a while.

some longer, some shorter. Typical.

Is your regulator hooked up to vacuum? Mine dropped to zero in minutes. Once I got the vacuum line connected to the regulator, it holds for days.

Yes it is hooked to a vacuum line under the Trickflow manifold

It may not be the regulator that is allowing the pressure to bleed down it could be the injectors, seals or even fuel pump.

So loosing fuel pressure is not an issue? as I'm trying to figure out a engine stumbling issue that I have and noticed this

Pressure bleeding off is normal when not running.
