Are these good locations for the water temp sensors?

Yes, those are good. I have 3 temp senders on mine. I wasn't sure if the computer sensor was calibrated the same as the gauge one so I used both. I also wanted to make sure I kept the 175 trigger sender for the electric fans was installed separately. You have to plug those holes anyway. I haven't read any articles that claim advantage for mounting them in one particular place but I figured if Ford placed the one for the computer on the passenger side front like in your pic on the left side, I would keep it there. I think it is for a warm up loop (EFI). Good luck, WEK.
