I'm getting to the point where I need to decide if I want a cubby behind the seats or not. Is there any pre-fabricated cubby kit available or if anyone has designed their own and wants to share the design let me know.

I built a simple box out of 6061 Aluminum (https://www.onlinemetals.com/en/buy/aluminum/0-04-aluminum-sheet-6061-t6/pid/1240). I thought about the Breeze cubbie, but decided I didn't want to try to fish my garage door opener or sunglasses out from behind the roll bars. I cut the opening so that the front had a bit of "lip" to it to keep stuff from sliding out, and lined the opening with windlace like you'd see on a 1965 Mustang.
The pictures below are from my MKIV, but the frame of the MK5 looks like it'd be the same. If you go this route, make sure you leave enough room between the sides of the cubbie and the roll bars such that you can install the bolts.

Don't make a box, just make a wall all the way across. That gives you space on both sides for storage.

I put a cubby in my Mk IV. I wish I had hinged the back wall on the bottom, so I could access it from the trunk. I am too old to reach for something that went to the far end of the world.

I did put one in mine. (MK5) I worked with Brent from Snakebite Motorworks to design a really nice storage compartment behind it. It is currently listed for sale on his site (with pictures from my garage). He did a great job. I would encourage you to reach out to him and ask any questions or you can ping me and I will help however I can. I added a carbon fiber access door on double action hinges which matches my dash and lighting in the cubby that comes on when the cabin lights are on. https://snakebitemotorworks.com/products/factory-five-mk5-roadster-front-drop-trunk

Go for the cubby hole access. It's really invaluable for "stash" things.
Here's what I did on my MkIV (https://thefactoryfiveforum.com/showthread.php?27544-40-Watt-Garage-amp-9365&p=341545&viewfull=1#post341545)
