I am having issues with the emergency brake handle rubbing on the trans tunnel wall/aluminum when the brake is "off"/ handle lowered towards the front of the vehicle. When the handle is lowered, one of the two button head screws (which are used on the handle) will make contact with the aluminum wall (it is the screw that is closest to the tip of the handle) and gently push the aluminum "in" towards the tunnel. I have flipped the button head screws so that the nuts are now facing the passenger (this helped, but didn't eliminate the problem). I have adjusted the mounts as much as I can, verified that the handle was constructed according to directions, etc...
Any help/constructive thoughts are appreciated!

I had the same issue and ended up trimming the aluminum to clear the bolt heads. I used the handbrake boot as a template to determine what could be trimmed.

Just bend it outward a smidge. The mount will flex.

Did rivet the aluminum that forms the sides of the transmission tunnel to the angled tubing that runs down the trans tunnel? Frank at ie427 Garage has a video talking about this very issue. He suggests riveting the aluminum that forms the sides of the transmission tunnel to the tubing for added clearance for the e-brake handle. After seeing his video, I riveted mine and picked up a good amount of clearance...

I remember that flipping one of the angled mounts upside-down fixed my interference issue. You can also file out the bolt hole a bit larger to get some more movement in the mount.

I wend old school, a little trimming of the panel, and some 'massaging' of the panel with a dead blow mallet. You'll never see it once the carpet and boot are installed.
