I have a Holly Sniper 2 EFI and most everything I have seen related to the throttle cable has it coming to the throttle body from the rear. Making 2 big bends from the driver's foot box to the throttle body.
If I route the cable so that it reached the throttle body from the front, only one bend. Am I overthinking this? does it matter? Pros/cons?
I am using a bracket similar to this.

I have a Sniper 1 and recently switched to a mechanical throttle linkage. The double bend in the throttle cable was causing it to stick just above idle. Blame it on all the heat now in the engine bay due to local regulations requiring catalytic converters. I would highly recommend the mechanical linkage but if that’s outside your budget then turning the Sniper around and going with the single bend would be an upgrade. This will complicate the fuel line setup slightly but has been done.

I had a similar concern, along with not liking the connection method at the pedal (really tough to adjust later) and elected to upgrade to a Lokar cable. I also went longer which will dramatically reduce the tightness of the bends and therefore the friction. I haven't got it operational yet, but that's my approach.
On reversing the Sniper2, my understanding is that you can connect the fuel supply to either the front or rear ports so if that's correct, there is no complication there. But if you ran your fuel lines up the PS it's a slightly different path from the regulator to the Sniper. If your regulator is near the center of the firewall, there's really no difference.

It appears to me that I can run the cable from the front without turning the sniper around. There are connections above AND BELOW on the throttle on the sniper. Anyone do this?

I have done this on a Holley carb. If the Sniper comes with a trans kick down connection on the lower throttle lever, which I would think it does, you can attach the throttle cable to that from the front. The cable will only then have a 180* bend. That way you don’t have to reverse the Sniper which would cause other unwanted hook up problems on your engine. I have been using that type of setup on a Holley carb for years along with a throttle bracket flipped to the down side to hold the cable, so it pulls from the bottom of the lever. The throttle cable is from Lokar and seems to be pretty robust.
Seems your other alternatives are to use the S turn in the cable, reverse the Sniper or install some type of mechanical linkage.

I routed mine different than what the manual shows (others have done the same) and it works perfectly. You can see my final installation here (https://thefactoryfiveforum.com/showthread.php?48937-Wedel456-s-Build-Thread-Gen3-Coupe-North-Carolina&p=593016&viewfull=1#post593016) and the routing here (https://thefactoryfiveforum.com/showthread.php?48937-Wedel456-s-Build-Thread-Gen3-Coupe-North-Carolina&p=573154&viewfull=1#post573154).

I reversed my carb. The single 180 vs two definitely improved the throttle smoothness.

I have a Lokar cable and did the "S" path. The trick is to secure the cable at some point, I used a split clamp on the valve cover. My throttle action is very smooth.
If you look close here you can see where I clamped the cable to the valve cover.

Two key elements:
1. Quality cable is a huge improvement over the FFR provided part
2. Securing the cable as Mike mentioned

Did the same. Lokar and secure to valve cover.

This is exactly what I had in mind. Thanks.

That is what I did as well. I cut the throttle cable bracket to fit the front two bolts of the carb/sniper mounts. Then looped the lokar cable 180 degrees. Worked really well!
