Hey folks
A few questions as I work through my dashboard.

What switches and knobs do you guys have on your dashboard?
I'm thinking I need
Horn
Ignition switch
Headlight switch
Hi low dimmer switch
Fan over ride switch
Others??

What did you do for a headlight hi low dimmer switch?

from L to R, Hi/low, horn, ignition, lights, manual fan, heater.
On the far left of the large gauges is my turn switch.

I'm using the i.e.427 turn signal, which includes a switch that I'm using for the headlight hi-lo switch. It also allows you to sound the horn by pulling the turn signal stalk if you want. Nice product and wiring it was straightforward.

You will see that my inputs match what you listed almost perfectly. One thing I'd bring up is that the under-dash is also an option for hiding switches that don't jive with your overall aesthetic or switches that are just unsightly. I ended up hiding my emergency flashers, fuel cutoff, and electronic emergency brake switches under the dash because it just didn't fit in the layout I was looking to produce.

As for the high/low beam switch - a standard switch on the dash certainly works (see my layout) but putting it on the floor in the old-school toe switch is also an option. If you do want to keep it on the dash the key is just to get the proper wiring in place.

Close to mine as well. I have an added oil temperature gauge. I have Billet Automotive buttons for the horn and lights. Lights are a on/off switch that drives a 5-pin changeover relay. Three-way switch for wipers. I don’t have a glove box because of AC/Heater, so I’ll be adding a grab handle.

Made mine really simple. Not even a key needed. I use the master kill switch when leaving unattended. Didn't want any switches on the main dash. You'll see just buttons at the bottom.

All Billet Automotive pushbuttons except for the horn which is the button on the end of the RT turn signal. Pushbutton for the headlights and another one for the high beams. Digital Dawg pushbutton start.

On the far left of the steering wheel is the horn button, below and to the right is the ignition/key switch, above that is the turn/directional switch. The five switches on the center carbon fiber dash are from left to right. #1 Head lights, #2 Aux lights ( turns on 2 foot box, one cubby, and two trunk LED lights. #3 Aux low pressure fuel pump. #4 defroster heater/fan. #5 Manual cooling fan switch. Behind the console just below the cubby is a 4 switch panel. The two outer switches are for the foot box cooling blowers that draw fresh air through the cubby and is directed into the foot boxes. The two inner switches are for the Dorman seat heaters (high and low settings).
My dimmer switch is a 60's 70's style Ford foot switch.(mounted to the frame off center in the pic) The box below the 5 switch center panel contains all the circit breakers. (No fues's in the car.) The three items directly above the steering wheel are aircraft "press to test" warning lights for R/L turn and the center one for high beam indicators. There are also amber "prest to test" warning lights for low oil pressure and when the cooling fan is on next to their gauges. I also have an under dash reostat for the elecronic power steering. There is also an under dash (hidden) aircraft style master switch that activates a battery contactor (kill switch).
