Why is the green "Fan Thermo Switch" wire down at the fan connections? How is that wire supposed to be connected on each end?

It connects to the thermal switch when you have the switch in the radiator. It will ground the fan relay and turn on the fan when the thermal switch closes. I believe there is another wire in the engine harness that does the same thing if the thermal switch is installed in the engine water jacket.

ok that makes sense if there's a thermal switch in the radiator. If not, no connection there.

I re-routed it up to the dash and use it for an override fan button.

How did you guys run the Fan Thermo Switch wire to use as a Fan Override?
Green wire back up to a dash switch? Other side of the dash switch to ground?

Yes, that's how it works. The green fan wires complete the ground circuit for the fan relay. Ground either wire and the fan runs. Can be to a thermal switch in the coolant or any other type of switch, e.g. on the dash.
