I struggled with a bunch of iterations on using a mechanical linkage. Never did come up with a good way, so I went with Drive-By-Wire. The Holley Terminator X Max supports it.
The best idea I came up with was a hybrid solution. Mechanical linkage shaft running across the firewall, that then went to a cable up to the throttle body. It was going to require fabricating several pieces and spend a bunch of time.

Coyote engine but decided to us the stock Mustang pedal. I'll sell it for $300. It cost me almost $1K including the drive by wire part and the billet pedal.
