I have read numerous posts regarding the installation of the Coyote pedal in the Cobra and noticed that most of the installations used a bracket to lift the coyote pedal higher in the chassis. Back in 2015, EdwardB created his own bracket and used the original pedal supplied by Factory five in order to make his pedal work as many have copied. I would like to have the pedal as parallel as possible with the Wilwood pedals, but I do not have the bracket for the Coyote DBW pedal as it seems to have come with the Coyote installation kit according to my research. In order to have the Coyote DBW pedal parallel to my Wilwood pedals, am I going to have to order the Coyote pedal bracket from Factory Five or is there another solution that I have not found in my research. Any help is greatly appreciated.

Grab a cereal box, make a template. Then get some off-cut of ~5mm steel or aluminium from your local metal fabrication shop for a few bucks. Spend a quality afternoon with hacksaw, files and vice. Bingo! One pedal bracket and the satisfaction of making it.
If you use aluminium, it will be easy to shape it in the vice with dolly and hammer, or big adjustable spanner. Aluminium doesn't need paint and screams 'racecar'

I agree with Nigel! I also suggest you try your foot in the footbox before you decide on the height of the accelerator. There isn't all that much room down there, and your foot might be more comfortable with the pedal at a lower level than the clutch and brake. Just my 2 cents.

Don't mount the accelerator pedal too high. Unlike the clutch and brake, your heel should be on the floor for stability. Try driving a car without having your heel touching the floor. It's very difficult to operate the accelerator smoothly, especially in a powerful, lightweight car.

I honestly didn't even think of that. The car is on a dolly and I have never actually sat inside so it makes total sense to see where the throttle best fits for my application.

That is very true.
Sometimes I get caught up on how things look rather than the function.
