Here is a post of mine where I detail out what I did. Really happy with the look and finish, the support it adds to the dash and having place to mount some nice heater vents.

I used mine to mount my heater vents... and honestly, I think they work better there than on the dash. I also mounted my gauge reset buttons and a few very small blue lights that come one when the headlights are on. Lastly, I mounted my bluetooth stereo there. All the knobs for volume, bass, treble and the sub are under there out of sight.
I don't think I have any pics. sorry.

I used aluminum door kick panel's to support the underside of the dash.
I just had to make a slight bend on my brake to make them fit well.
Also, I moved the fuse block to the passenger side of the car.
The under dash area turned out clean and is quite steady.

I went with the full under dash panel for a cleaner look. Also used the panel to create a mounting system for cup holders and cell phone holders that are hidden when not in use. I have a few posts in my build thread going into details.

The toggle switch is the electric parking brake. Cruise is cruise. The cell phone clamp folds down and accompanies the nearby USB outlet.

I used the cheapie brake I picked up to make 3 brackets, spaced out below the dash, and connecting between the bottom of the dash and frame. The 90* bends on the sides add a lot of stiffness.

I also used some steel L channel to fabricate some brackets to tie in to my passenger "oh crap" rail. It ties the rail directly to the frame.

The brackets can also be used to hold stuff. On the DS bracket I mounted an aux power plug, into which I can plug my battery tender in the winter.

The center one sits in my center console, and has a USB charger in it.

It takes a bit of time to fabricate additional stuff, but it's well worth it in this case. It stiffens up the dash a tremendous amount, and lends a really solid feel to the car. Hope that helps.

Not in my case. With 3" wide brackets, I can get to anything I need to.
To the right of the steering column are the gauge reset buttons and dimmer.

On the passenger side is the amp and the USB port on the side of the console.

To the right of the amp is the handheld for the Holley Sniper EFI.

All panels attached with button head screws and removable.

I made three under dash panels, all secured to the dash lip with #10-32 screws/riv-nuts and to the 2" square tube with #10-32 screws/tapped into the tube. I put all sorts of stuff on them. On the hidden side, I mounted the boxes for my push button start. On the side you can touch, I put heater vents, seat heater switches, fresh air vent fan switches, gauge lighting knob, and reset switches for the speedometer and clock.
As Rich implies, getting to wiring that's behind the panels is a little more involved. But it's not particularly onerous.

Terry, as I mentioned on the phone. simple panels, one for each side. Held in place with black trim screws so getting them out of there is no problem. Go to the 16 minute mark of the video.

Thanks Frank, I remember seeing that video but couldn't find it.

I made 3 panels that cover the whole underside of the dash. They support the dash and supply mounting points for courtesy lights, heater vents, charging port, clock adjust button, hazard light switch, fuel pump disable switch etc. The centre panel has a hinged door that hides the control head for my secret audio system. I open the door and the control head drops down into view.

Based on advice and design ideas from this thread (thanks!), I ended up with three panels. I wanted simplicity, maintenance access, and room for switches, power outlets etc. I think this gets me all that. Just need to clean up the panels and get them to the powder coater. I'll use trim screws and/or rivet nuts for final assembly.
The dash is rock solid now.
