I purchased my car used. It came with one ignition key. Home depot scanned it, and it cannot be copied? I found that quite odd. Any other options for getting a new ignition key copied/cut?

I was able to get a duplicate from a good old fashion key shop in a real hardware store. Those new key readers are limited to the most popular keys. My guy had to take a longer blank and grind a lot of length off it, but it works.

If you can't get a key cut, here is another option you might consider:

https://www.amazon.com/gp/product/B000N9XPNC/ref=ppx_yo_dt_b_search_asin_image?ie=UTF8&psc=1

It's a simple ten-minute swap.

Take it to a local locksmith shop. They will be able to duplicate it. The keyblank is not one of the more popular types so the big box store doesn't have it in their kiosk

Is it one with the plastic head and Factory Five logo?

If so it's actually a common Toyota key blank; TR-33, Hillman #84196. If you want one with the plastic head (won't have the FFR logo, but plastic) it's a TR-33PH, Hillman #84274. If you go in knowing that it should send your local locksmith down the right path for making a duplicate.
