What do people do, if anything, for the visibility thru the dash opening and the wires thay rest in the column behind the dash?

Trim ring. Several vendors make them or you can make your own.

I 3 d printed one then painted it black. I can't figure out how to attach it on here, but if you want I'll figure it out. Someone posted it on the facebook group a couple months ago.
