I'm out of room in the garage and looks like i need to set the body and hardtop out in the weather while I work on the chassis. How bad is the freezing temps on the fiberglass? I know we leave boats and other fiberglass stuff outside all year but how are these bodies with the harsh temps? I will cover it with some tarps but that won't stop the cold.

No problem at all. You don't even need the tarp. Here's how they're stored at Factory Five 24/7/365.

If it’s covered up it should be fine.
The bad drivers door that was replaced is out behind my garage, not covered, the gel coat has faded from a shiny black to a flat black. Not sure if it really matters.
Can’t you do something like this?

I cut the Challenge Car body side to side at the door sills. Each half is hanging over a stall.

I had difficulty finding space to store 14 foot polyester/vinyl ester street rod fenders and put them on the north side of the garage under a 4 foot high soffit and tarp. A year later I retrieved them for finishing and paint.
In the hot sun moisture wept from the bare glass pores. Apparently moisture in the ground was adsorbed. I would bag your parts or isolate them from the ground.
