It looks like Ford offered a 575 CCA battery, and the best battery Group 51 battery I can find is 500 CCA (Duralast Gold) to fit the Breeze tray. I'm also going to run a heater, heated seats, and stereo (no amp though). Should this be enough power?

I used a 500 CCA Duralast Gold group 51 mounted in front with a Windsor on a build I did. Even though the CCA is not as high as the physically larger batteries I figured it was a reasonable tradeoff for the ability to use ultra short cables that the front mount allows. The car has experienced no starting problems hot or cold. The battery capacity is only going to come into play when starting or if the alternator can't keep up with the load. I'd expect that using the Coyote's OEM alternator that will not be an issue.

Sweet. I've been doing more searching and it appears the 4.6L DOHC motors are starting fine with as little as 200 CCA.
