I’m considering something like an AEM CD-7 in the coupe instead of the normal analog gauges. I’ll be using the gen 3 Coyote with ford performance pcm. It looks like the PCM has the canbus wiring as you’d expect, and the Coyote wiring harness includes the wires too. The RF instructions I read have you actually cut those wires to get them out of the way, so I’m curious… how much trouble would this be signing myself up for?
Thanks!

You are correct. The CAN bus wires are on the ODB2 connector. Wouldn't be able to read all the messages, codes, etc. since they're all CAN bus driven. My Gen 3 Coyote with the Ford Performance control pack connects to a scanner and works as it's supposed to. Gen 2 did as well. I see where FF says to cut the CAN bus wires that they show coming out of the control pack harness by the starter wire. To be honest, I don't remember them there and the Ford Performance instructions don't show them there either. But easy enough to leave them alone if necessary (and if they're actually there).

As said, the CAN bus wires are present. If you have not already done so, I would contact AEM regarding your application to be sure they can see the information needed by the gauges. I would be interested in the answer you get. I have Dakota Digital gauges in another project. The have a BIM (Bus Interface Module) that is said to be able to read the required information. About 5 years back, there was a note in the installation instructions specific to the Coyote where they would not guarantee operation. I believe that note has been removed. The PCMs used by the crate motors do not necessarily have all the functionality of the OEM units. Best to verify with AEM before plunking down the bucks.
