With the shortages and delays in parts, my engine and tranny not arrived yet, I`m running out of building options, and right at this time of the year while I`m on vacations and at home !:(
Will I get into too much trouble if I go ahead and final rivet all the panels? I have not run any brake and fuel lines yet. I know it will be easier with no panels, but...

My plan is to fix the trunk panels and back panels. the driver foot box I`m leaving 1/2 open because I did not receive the pedals yet...

In trouble? No. But I'd sure recommend installing fuel lines, brake lines and rear electrical harness before final riveting the panels. Those parts are on backorder?

why haven't you started on fuel lines/brake lines?
it's so much easier to get those in before riveting the trunk panels. if you're putting a fuel filter above the right rear tire, it's much easier to get to it from above. also the rear hard brake lines from the DS to PS are easier to get to w/o the panels in the way.
remember to rivet the upper trunk floor in before doing the rear cockpit wall as the wall gets in the way if you do that first. you can button up the PS footbox as well as the cockpit floors and sides as well.
do you have your wiring harness run yet? also easier to do w/o the panels in the way. Are you doing an ebrake pulley mod? easier to do before panels placed in the cockpit.
if you're running out of clecos, just pop in a few strategically placed rivets to hold the panels in place and drill them out later for final silicone/riveting.
is your gas tank in? are you doing the kleiner nut coupler mod? if so, do the mod first before putting the gas tank in.
Ok.. I`m sold.. not riveting anything until brake/fuel/electrical is installed!
Question on fuel tank: I want to put a brand new one, is E4ZZ9002CF the correct part?

Remember to drill the roll bar(s), if you plan to have them on your car, before installing the aluminum pans.
It makes that process a lot easier since you have better access to the tubes.

If you plan on some type of coating on your panels this would be a good time to do it. Just make sure all your rivet holes are done. Also a great time to do any mods , such as between seat cubby hole ,etc.
