are you doing your own body/paint? some painters/body guys prefer to do all their own body work so they don't have to fix problems we create.
I ground down my parting lines while on the body buck. at the same time, I also trimmed the the lip at the front dash cowl and rear cowl.
I used an orbital palm sander w/ 80 grit paper. I've been driving in gelcoat this summer and wasn't sure if I'd rather drive a car with the parting lines showing or with pink lines at the "seams".
If you're not doing your own body work, then in retrospect, I'd probably just leave it for the body guys. It takes like 30min to grind them down and is only a fraction of the work involved getting the body ready for paint.

I sanded the mold lines while body was on the buck. I did the body filler while properly mounted on the chassis. It didn’t seem to me that doing the bodywork on the mold lines was critical that it be done only while on the chassis.

I thought I would ask . I think I will get a couple coats started and when body is back on the chassis for final fit and gaping and finish filler coats.

Try to NOT overwork the mold parting lines.

Had I not had a ton of expert advice from Jeff Kleiner, a.k.a. Sir Jeffski, things would not have gone as smoothly.
When I ran out of talent I brought in my friend Sammy, who is a professional body shop guy, to help me out.
For me, the journey of building a Cobra was amazing and came with a lot of hurdles.
My biggest takeaway was figuring out when I needed to bring in professional help.

Good Luck & Glad The Videos Helped!
