Starting to plan out the wiring for my Coupe with a Gen 3 Coyote. I’ d like to put a fan light on the dash that would indicate when the radiator fan is running. Was wondering where would be the best place to tap the positive lead for the LED light?

You could put a small wire in place wherever you connect the coyote supplied wire to the FFR supplied fan.

What Mike suggested will work and exactly how I wired a fan indicator light during my Coupe build. But I found that often the light would stay lit even though the fan wasn't actually powered. If there's enough air going through the radiator and cooling fan, it stays spinning and backfeeds the indicator light. Usually, once the fan stopped it wouldn't start back up again. But when in motion, if the fan was commanded on and then off, it would often stay spinning until the car is slowed or stopped. You may or may not find this OK. I didn't like it. Tried using a diode with a heavy enough current rating, which worked but it would get very hot. Maybe not an issue, but wasn't sure about it since it could fail open and then the fan wouldn't run at all. So switched to a heavy duty relay. That's about a 90% solution. To keep the wiring simple (since the car was already done and didn't want to break into the wiring) I have the fan power on both the coil side and the power side. In some instances, there's still enough backfeeding to keep the indicator on or lightly glowing. But it's mostly OK and I'm leaving it alone. In hindsight, I think the best solution would be to have the LED leads directly across the fan motor and a diode on the positive side of only the indicator. That would require running another wire up to the fan motor. But would keep the diode from having to carry the current powering the fan and the diode should block the backfeeding to the light. Sorry for the long explanation. Hopefully it makes sense. If someone else has a better idea, would be interested.
