I decided to swap bumper overriders to quick jacks and realized that there’s more than one way to install them: facing forward and to the rear, and also open to inside or outside of the car. What’s the consensus on this one?

Well, the open hook part goes down as this is where the lift cart would grab to lift up the car. I always positioned them with to the inside. Thought they looked best that way. Just don't try to use them as real lift points!

Hook up would be a bit odd. Other than that you'll probably see all the directional options. What is a given is that you'll run your shins into them at sometime or another and probably multiple times. Trust me there's little give in them.

I actually forgot about the upside down position, which expands the number of options. I feel like having them directed outwards turns them into a pedestrian shredder, but probably looks better than inward. Whether the 90 degree angle is directed to the inside our outside doesn’t really matter

Pipe insulation will protect the shins when it's in the garage. So I've been told. My shins do not reflect that fact.

There are plenty of photos of quick jacks turned in, turned out, "nuts in", "nuts out"... the only consensus is that there's no consensus. If there's a particular original Cobra that you're basing your build off of, do it like that. Otherwise, do what looks best to you.

I think if you orient the quick jacks according to what you like you'll not be much different than the the original owners/racers. They seemed to run different motors, wheels, tires, seats, rollbars, paint schemes and 'bout every other aspect of the cars according to the task and desires.
But then I struggle with coloring books and rules.

Unless you are thriving for a period-correct replica, do what you think looks best.

Mine are turned out, and the front spacers have been shortened significantly. If you decide to shorten the spacers, don't do what I did. I cut them to exactly the same length but didn't realize the body isn't perfect so they will be cut to different lengths to look the same.

I didn't like the bolts supplied from the factory, so I purchased chrome "bullet" nuts and attached them to threaded rod.

PS by any chance you remember the nuts size?

Am I this remembering correctly: the 289 racing Cobras had the quick jacks mounted with the hooks in; but the 427 racing cobras had the hooks out (because the quick jack wouldn't clear the oil cooler scoop)?
