Hi all, I am close to first start on a Gen 3 Coyote. I have seen a few recommendations on amount of gas, from 1 gallon to 5 gallons. Suggestions on the right amount for my setup?
Also, I am curious how people seal the fuel tank after gas is in. I just have a bag around the filler mouth right now. I'm moving at a snail's pace since we had a new baby, so I don't want to stink up the garage for a couple months after first start. How do people seal the gas tank with the first start fuel inside?

I usually add 3-5 gallon to the fuel tank for first start. A full 5 gallon container can sometimes be a pain without spilling it all over the floor. So I tend to half fill two separate containers.
As far as a cap for the filler tube. Plumbing aisle at the local home center. It's called a test cap. 2" size works just fine.
Keeps the smell out of the shop too.

5 gallons in will also help you verify your fuel gauge. Should be at 1/3 tank w/ 5 gals.
(x2 on the plumbing test cap!)

I did some go-karting with the bag over the fill tube. I started with two gallons and later replaced that with a bit more. Once the body and all filling components and cap were on I put in a bit more, drove it, than added a bit more until I finally filled it full and could see the fuel in the fill tube. Each time I added a bit more than before I was always checking for leaks. None, except up front with my injectors and fixed that right at the beginning.

I took the gas tank hose and connected it to a radiator hose that I was not using which fit the inside of the gas pipe and then slid the the gas cap in into the radiator hose. I used radiator hose clamps to keep it all sealed and gas smelling free. Looks like I have a snorkel for my rock crawler hanging off my gas tank LOL! You can see it in the corner of the picture.

Nobody mentions on here, but I would recommend putting some fuel stabilizer in especially if you have a carb and don't plan on running it dry in a couple months. Modern gas goes bad in a hurry and can cause some blockage in your fuel system. Given how long our builds take, could be in there for awhile.
