Are there any good sites for ordering custom steering wheels with the correct screw patter for the FF boss?
I have researched many sites and find a lot of nice steering wheels, but all have the FF screw (bolt) pattern.
Do people just drill new holes in the boss to accept the different wheel?

You'd have to change one or the other. Drilling another bolt pattern in the hub sounds easier than filling and blending the plate on the wheel. There is some type of protectant finish on the "bare" aluminum you would have to dive into. Drill the hub!

I ran into the same issue and ended up using this Quick Release Hub from JEGS and a steering wheel by GRANT.

I've got issues with my left hand so the Factory-5 wood wheel was too thin while the leather-wrapped version was too thick.

You can buy a custom wheel directly from Moto Lita in the UK. They made me a 12" wheel with the cobra bolt pattern. I also bought their center cap with Cobra emblem. Pricey but top quality from the OEM that made them for AC
