Is there any value in not siliconing the top panels for the drivers footbox, to make it easier to pull them apart someday if I need to get into the master cylinders?

I can only comment on the Coupe, but I'm guessing it's a nearly identical situation with the roadster. Under no circumstances would I make that footbox top hard to get into. I've already had to get in there twice since declaring "I'll never have to get in there again". I'm SO glad I made it easy to access.

I just tapped into the frame with a few stainless screws instead of rivets and put some thin foam weatherstrip along the bottom edge of the panel. Might not be as waterproof as using silicone— but it's more waterproof than 99.999999% of the rest of the car :D

On the roadster, there are three panels that top the driver's foot box. The outside, inside and access panel. Once the body is on, you really can't get at the larger panels, so you might as well seal them. The access panel is relatively easy to get at, just be careful about the upper corner, as the body will get in the way of any screw you put there. Not that I would do something like that... ;) Theoretically, if you took the body off, it would be easier to remove the tops without silicone, but if you're going to go through the trouble of removing the body, a little silicone seems like a small item.

During my build, I tried to visualize everything that may need to be accessed and worked on. So I made a lot of panels and parts removable (wheel well elephant ears, trans tunnel cover, radiator cowling, access panels, etc). My upper and outer DS panels are attached with nut-certs and #8 (I think) screws. I realize the body will have to be removed, or at the very least pulled away, to access that area, but I wanted to make it as easy as possible for future work. (before the body went on for the last time, I had already gone through 3 clutch master cylinders. I'm almost afraid to look any more.)

I changed out my entire pedal box and changed to a hydraulic clutch in a completed car through the access panel and from under the dash.

I didn't say it was fun.....but I got it done.
