Before I got my tires & wheels on I was using some junkyard ones just so I could roll around and do my initial go-karting. I was getting some rub on my F panels but I knew I couldn’t be sure what would happen till I got my final tires & wheels on. Now that I have my good ones on I checked. My steering wheel is centered, and I get one full turn to the left and it doesn’t appear to have any interference issues. When I turn to the right I get about 1 1/4 - 1 1/3 but the PS wheel does hit the F panel. Is there a way to get a little more turn to the left which would reduce the turn to the right? And keep the steering wheel centered?

first, count the number of full turns it takes to move your steering lock to lock. I can't remember if it's 3 or 5 full turns (3 IIRC).
then, with the wheel clocked all the way in one direction, turn it back towards the center by half the amount (1.5 turns if 3 full turns, 2.5 if 5, etc).
this will be the center position of your steering column. if your steering wheel is a bit crooked, this means you'll need to shift the spline adapter that connects your steering shaft with the steering rack. I painted a stripe with a marker so I could see how far I was adjusting it. you might need to move it a tooth or two in one direction or the other. this will allow you to center your steering wheel.
Also make sure your steering rack is centered in the frame. Karlos has a very nice write up about this. you may need the breeze offset bushings to allow you to move your rack one way or the other. I found that I had to move mine maybe 1/4" to the PS.
lastly, if you're checking F panel rub while jacked up, the rub usually goes away once the car is on the ground. with the suspension compressed, the back of the F panel is further away from the wheel.

I do have the car jacked up. I just went out and went full left. Then went back to the right and only get a full throw of about 2 1/3. No way near 3 full turns of the wheel.

The FF instructions are not good on rack setup and it appears that the rack is actually not physically centered in the chassis . Another route is to limit the travel to the right with a restricter.

Try taking it off jacks and see if you are still rubbing. And go ahead and center your steering wheel if not centered.
