Getting ready install a pair of 6x8" coaxial speakers. I'm thinking I just need baffles behind them and grills in front? Any other tips? Thanks!

I'm looking at 3 locations, which would be best for sound?
1. Both speakers at head level between the seats.

2. Each speaker directly behind the heads of the driver and passenger.

3. Down in the kick panels in the door bars.

My thoughts would be either centered behind your head or down in the kick panels. If you go with between the seats, pic 1, you won't have good "balance" left the right hearing wise. Behind the head at least it will be balanced and you will get the same left and right ear. Similarly in the kick panels, more balance.
I put in good quality 2 way in the door took a lot of work to get it right but at the end it is surrinzin good and I am have always has great audio in my car.
So far in GTM I have only listen when the car is off.:)
Speaker not enclose properly/sealed will sound like crap.

P.S.
My two way are separate with crossover and the tweeter at mounted close to top door covers.
A good idea is to use a pair of stereo bluetooth speakers and move them around. Having done this myself, centered speakers will give very little stereo effect and feels really cheap. Doors are good but you need some real power and solid boxes in the doors to make any meaningful music, else it will just be good for thin sounding radio talk.
I tried next to shoulders/pocket where seats have some room on the outside/behind backrest, it's just too close to you, it literally fills your head with sound too close.
I tried the unused space at the floor right in front of the seats, great and out of the way but sound not coming out well.
I found the best space is a large speaker with capable base under the dash/above knees (only did pass side so far, both would be ideal but tight on driver side). You can anyway get some really good base reflecting around in the cockpit. The hard part is to get excellent clarity from there. It is possible if creative, but the most reliable and consistent setup would be like Mostafa mentioned, add a pair of small tweeters near A pillars or at top of doors.
