I don’t have a lot of miles on my Gen 2 coyote yet. The hottest temperature the vintage gauge has shown so far is 70C, 158F. I have not driven it on a hot day yet but still seems like it should run around 90C. The radiator fan turns on around 3 to 5 minutes after start. What are others seeing for temperatures?

Mine's a solid 90*. Rarely ventures far from that.

Mine also is usually right around 90 C (194 F). Takes a little while to get there based on the usual location of the gauge sensor. Doesn't do much until the thermostat opens. If you really want to dig into it and check further, use a scanner on the ODB2 port. Water temp isn't there. But Cylinder Heat Temperature (CHT) is. Comes up pretty quickly and will be in the 195 - 210 F range or maybe a little more depending on conditions, how you're driving, etc. Would be an easy enough way to confirm your engine is coming up to normal temps. The "aggressive" cooling fan settings in the Ford Performance control pack on the Gen 2 have been discussed a lot. It will run a lot. By design by Ford. Even when not really needed.

On cool days I see the same numbers. I installed a PWM 2-stage fan controller so I wouldn’t have to listen to that fan all the time. I set my on temp to 90c and rarely hear the fan at all now. On a 90 degree day recently we were participating in a birthday cruise with lots of idling. The engine temp approached 100c but never went higher over an hours time.

Mine also runs in the 80-90 range but the obd2 shows a constant 192-198 and never goes above that.
I also installed a fan controller in line with the ecm orange fan wire as the fan would turn on at 178 and never turn off.
Now it never turns on but it hasn't been hot out here on the coast. I also installed a manual on fan switch just in case.

Mine has consistently run between 82-85C / 180-185F. So far, I have not seen it pass 185F during go carting.
