So......I am retrofitting my MKII with Classic seats and new belts. I just figured out that the newer belts require 2 slots and mounting points for the shoulder harness. The old belts are different. I really wanted to stay with the Simpsons for the look. Any ideas? Picture of what I have now attached.

Simpson still makes the "webbed style" belts if you want to retain your single to double style.

I have the classic MK-IV seats in my MK-II and still retain the webbed style belts, but I put the transition piece (where the belt splits into two) in the trunk and used two bezels per side. Had to cut additional holes in the rear bulkhead and replace the carpet but worth the effort as far as looks go. Never liked the webbed look from day one, or the fact that the web rubbed the back of my neck. When it's time to change out the belts, I'll order the regular two belt style . . . no web.

I think you will find it hard or impossible to find an Y style belts. Seems the racing sanctioning groups don't recommend them any more. I found this as an example. They sell Y belts but listed as off road UTV application.

If you click up near the top left you see a dropdown w/ various uses. Click 'Racing' and there are no Y types. Click 'Off Road and UTV' and there are some Y styles. Personally I have no problem w/ the Y style, but I run SCCA autocrosses and their tech guys might. They definitely would have a problem at any track event.

For the older cars with only one belt hole behind each seat, is there a problem with running the two shoulder straps through the same hole and anchoring them together?

I would want to widen the single hole some and be sure the ends particularly have some type of protection so the edges of the belt aren't being worn.
