I am looking for any feedback on camshafts being used by roadster owners with the 429/460 big blocks. I posted on the roadster forum with some views but no comments. Also, will other than the stock oil pan work in the MK4? Thanks

Not many people are big block experts. This is probably a better question for an experienced engine builder.
You can run a different pan in the Mk4. The important thing is that the pan is not more that 7" deep. If it is deeper than that it will hang below the frame rails. You could run a front or rear sump pan. We have a 427 with a track T-pan on it in the showroom.
