Has anyone undercoated the fiberglass body of the MK4 before assembly. If so, what product do you recommend

I recommend the Dupli-color. I used it and am happy with the results. Big plus: clean up is easy.

I first painted the entire underside with black epoxy paint. After completion, but before final body paint, I brushed the area of the body above the tires, with a bed-liner. Then as a final sealer/protectant, in the tire areas of the body, and rear cockpit exterior cockpit aluminum, I sprayed a rubberized/ashphalt undercoating. Also did all four aluminum splash shields. The idea being, it would reduce road noise from debris kicked up by the tires, and further prevent stars in the paint.

I undercoated and also did Alex's inner wheel well liners as I was still concerned about stone hits reflecting up through the fender to the paint. Plus the liners give a more finished look.

Was one of those things that slipped my mind till it was painted. I put in wheel well liners instead. All alloy exposed exposed to the weather is covered with truck bed liner
