I bought leather for my trans tunnel cover here. You could do that for the dash.

Leather is nice. Used it on my last build and I like it. For vinyl, lots of guys buy the marine vinyl at their local JOANN Fabric and Craft. What I found there was fabric backed and seemed very durable. It is a little thick and a bit harder to work with IMO. Another option is the same vinyl Alex uses on his custom glovebox and dash covering. According to a post on the other forum, it's this stuff: http://www.upholsterysupplyonline.com/products/Rapper-Extreme-Multi-Stretch-Black-360-Degree-Stretch.html. I've used it from Alex on a build and like it a lot. Whatever you choose, highly recommend applying foam (if used) and covering material separately.

I have the FFR panel and covering material that came with my 2015 MK 4 that I never used, because I have one of four de-badged 2015 Anniversary models that came with the new molded plastic panel. Never opened the box. I can send you photos if you want.

I've always wanted to try Tolex: http://www.mojotone.com/TolexCarpetTweed_x#/
Comes in lots of colors and tectures, even animal hides like snakeskin, rhino, elephant, ostrich, crocodile, alligator, even one or two with feathers.
If it's durable enough to handle being tossed around by rock n roll roadies for 30 years, it's durable enough for a dash on a car that's probably going to be garaged for its entire existence.

I bought some nice leather on ebay. Just search ebay for automotive leather and then seller is Discounthides. Nice product and great prices. I just picked up another 54 sq ft hide from them for $59

After reading a few posts and searching the web for leather, I found out the Tandy leather store is about 30 minutes from my house. Ended up buying 2.5-3 oz leather, 1/2 hide for $99 (military discount applied). If you want to look it up, it's called Studio Sides on their site. They had thinner and thicker, but 2-3 oz seemed to be correct, based on group text.
I used "Closed Cell 2A Volara Foam Landau Padding", 1/8" thick from: eBay - Headliner Magic (headlinermagic), http://www.headlinermagic.com. I purchased a length of two yards to not have a seam. (The dash is wider than the width supplied).
Also used 3M Super 77 spray adhesive to attach. One can is plenty.

That is surprisingly affordable, for the varieties I glanced at.
