Are there more detailed instructions for the wilwood brake pedal pushrod and balance rod adjustments that work best? Def want to get this one right or close now as it appears to be difficult later.

Center it up like the instructions say, and make sure to provide the clearances as shown. That will get you through final assembly, bleeding, test drives, etc. You may need to adjust the front/rear bias, but you won't know until you drive it.

make an access panel on the top of the foot box to the brake bias

FF incorporated this into the Mk4 kit several years ago. Based on previous posts, the OP has a new Mk4. So access panel is there.

Has anyone used the remote bias adjuster that Wilwood sells?

I'm interested in that part too.
Would be nice to have it mounted where you could fine tune the front and rear bias from the driver's seat.

Yes. I installed on the dash to the lower right of the steering wheel. The cable is a little stiff because of the short radius turn inside the footbox, but it works.

I tweeked the adjustment about four times.

Poor picture but you can see the blue knob behind the steering wheel.
