How different is the size of the interior of the 289FIA vs. Mk4?
Are dimensions any different, especially shoulder and leg room?

The 289 and MkIV share the same frame, so I wouldn't expect any major difference in shoulder or leg room. The seats are the same, carpet is the same, as is the cockpit aluminum.
Although.... there would be an impact to passenger space from the forward angled roll bar....

I was told the roadster Mk4 street (not s/c) dash would not fit in a 289FIA. Why is that?

The MkIV gauges don't fit in the FIA dash holes (and the 289 gauges won't fit the MkIV holes), but the dash panel should fit regardless.

I don't want either the FIA gauges or dash. I would want the vintage gauges and roadster (non-s/c) panel in an FIA. Would this be possible?
The intention is to make a street car, no roll bar, sidepeipes, with the roadster dash, street bumpers, eggcrate grill, smooth trunk and pin drive wire wheels.

I think I may have a blank MkIV dash panel somewhere in my garage. I'll see if I can dig it up and hold it up to my FIA dash for comparison.
Since the frame is the same, I would expect there to be no issue, but I'll take a look this weekend.
