The anniversary water temp gauge reads in Centigrade. All may read in centigrade for all I know. My question is what is an acceptable safe operating temperature range for this particular engine in centigrade for my 427/351 w Dart with carburetor.?

Hard to say definitively without knowing what temperature thermostat is installed but generically I'd expect to see operating temps between 180F (82C) and 200F (93C).

I contacted speed hut and had my temp gauge redone in fahrenheit (guess thats how its spelled). The speedo reads in MPH so I didn't want the temp to read in centigrade.

I just got my anniversary temp gauge and speedo back from Speedhut. They changed my C to F and added hi beam and turn signal indicators and kept the anniversary logos. No centigrade for me, either.

To add to what Jeff said about temp range, this will also be influenced by the brand and type of thermostat you use. I have found that Motorcraft thermostats open more consistently at the stated temp than other brands. Be sure to check the opening in a pot of water with a thermometer before installing. In one test I conducted, a 180° Thompson opened at 190°. You may be surprised at what you find.

In general carb sbf engines run 180F and efi run 195F. Now that can be the exact same engine w/ different fuel systems but it gives you the normal accepted range.
180F = 82C
195F = 90.5C
I have run my 351 and stock block 408 at 180F

I have the 427/351w 780 carb from Mike Forte with a 180 thermostat. Thanks is for the responses.
