I've searched and read and come to a few conclusions but it's always nice to get some fresh opinions.

Those of you that have built or are building a complete kit, what would you change? What did/would you add? What do you think is an absolutely necessary upgrade or modification?

I'm just trying to gather up others' lessons learned before I take delivery of my kit in January.

First of all,
Congrats on you buy,
It depend on you. There is a lot of discussion on:
-Power brakes vs Manual Brake
-302 vs coyote
-Power Stering vs Manual rack
-15in vs 17in vs 18 in Wheel
-With or without AC/Heater/Defrost/Heat Seat ... Foldable roof
-IRS or Solid axel
-Sound deadening or not
-Radio or not

When I ordered my kit 1 1/2 years ago, I knew I wanted a power steering rack (Breeze), high back seats (OMP, purchased locally), and Gas-N pipes (Breeze). So I asked them to eliminate these stock items from the kit. F5 was happy to accommodate.

Later I decided to install a larger capacity coolant reservoir.

Most of those decisions have already been made.
Manual Brakes.
Coyote/TKO600 w/midshift.
Power Steering.
17" wheels.
IRS
Heated seats
Top is a possibility if I can find one I like the looks of
Still deciding on heater. I want one, just need to look at all the options
Radio. Maybe, if anything I'll likely just hide a bluetooth amp and install a couple speakers.

I guess I should have been more clear, I'm mostly looking for build tips and things in the complete kit that can be built better or parts that FFR supplies with it that just aren't that great and most end up replacing. Stuff like fabbing up a better radiator mount(or using the Breeze parts)

I ordered the Stainless pipes with my kit, but the more I read I think I'll cancel those and go with something a little quieter out of the box. How do you like your Gas-N pipes?

Gas-N Pipes are in a completely different class quality wise. I wouldn't say they are quieter rather deeper in sound. The welds are really clean and the polish is beautiful.

Only thing to keep in mind is that most end up having to purchase wedges to get them to fit up properly with the Factory Five Headers. If you really want a clean fit also get the headers from Gas-N. Not sure about the headers or wedge requirement for the Coyote setup.
