....fit in a MK4

Should I be ok with the big and tall seat?
Don't want to go through all the build effort to end up totally uncomfortable in the car.
Will I have problems with pedal vs feet room?

Obviously I will find one to sit in before ordering a kit but I am just wondering.

You should be fine. Out here in the West we have many large guys who have successfully built roadsters and enjoy driving them. Maybe the Wookie will see your post and chime in with some encouraging information for you.

It depends a lot on your inseam length.

My brother is 6'4" with a 36" inseam @ 230 lbs. I bought the Big Boy Leather Seats in hopes that he could drive my MK-4. His legs are so long that he just doesn't fit in my car with the seat up against the rear of the cockpit. The vintage Kirkley's low backs might have worked, but I don't have those. To make matters worse, his size 15 feet don't do well in the foot box either. My advice is to sit in one before you order your project.

Definitely sit in one before buying. I am 6'3", 36" inseam, but only 180 lbs. I was marginally comfortable in my roadster. I completely re-worked the chassis on my 818 to position the seat, steering wheel, and pedals exactly where I want them. Took a long time but comfort is absolutely critical, especially on the race track as I found with my roadster. You can absolutely make it comfortable for you, but it might involve some fabrication to make it perfect.

Seat selection and pedal set up and critical for comfort for tall guys. I am also 6'3" and give you some advice. Feel free to give me a call sometime.

6'5" 245 lbs. 36+" inseam with the drivers footbox narrowed 1-1/2". Size 12 shoe. 18" wide Kirkey race seat mounted on the floor with slider brackets and all the way against the back and I fit perfectly and comfortably. Have to wear a narrow driving shoe but thats it. It can be done.
