I'm looking to replace the factory seat belt with an aftermarket 4/5/6 point harness. I have the stock blue STI seats. Retraction is made difficult due to the seats being all the way back and getting hung up between the seat and back panel. Also, since rear belts were used, the latch end is no longer rigid and makes buckling a 2 hand ordeal. (width of buckle is different from front to rear) Ive read through the threads that were several years old that discussed it but now since more and more cars are on the road, what are people using?
This will be primarily for daily driving and an occasional autox or track day.

That's what I bought when I gave up on the stock retractors... you will need a harness bar

Correct. Ive noticed they have the 4 point that meet to make one connection point behind the seat. My STI seats have a hole just below the built in headrest. Would that be the best option or go with two separate connection points. I can fabricate a harness bar to mount to.
With so many available models, which should i go with? I am a newbie when it comes to this.

Just noticed you're using the stock seats. Don't know how high they are; I am using a set of Kirkey seats that have cut-outs for the shoulder straps and the harness bar from FFR. The harness bar connects to the tabs on the roll bar and was pretty cheap if I remember, but yes you could far a bar to do the same thing.
That will determine the height of the shoulder straps and you need them to clear the upper edge of your seats if I remember the installation diagrams correctly.
Here is my install with the harness bar, seats & Schroth 4 point ASM harness
