I have seen several Hot Rods with running staggered wheels but never a roadster.

I had a '88 911 that ran two different sizes.. but that was for handling to help handling in corners due to the weight distribution. And you never forget, once it happens to you, that lift throttle/oversteer is real! They were taller and narrower on the front. Not sure if that would work on the roadster since the weight distribution is 45% / 55% with a small block ford.
I am sure some of the racers here can give you some more detailed physics involved.

No reason you can't. Looking here at Bullitts and many of the other Mustang wheels, they are available in several diameters. If there is just one inch difference you would almost need to read the size on the sidewall to notice.
