Can a Coyote engine be mounted on the Coupe? If yes, what transmission should be used (both manual and automatic).

Yes, several folks have already done this. Tremec TKO 500 or 600, depending on power output. Don't know about auto trans. There is an excellent thread on this process in ffcars.com, in the coupe forum "The help me spend thread" by Seattle Dad.
