Matching Locks

I have built a custom dash with a locking glove box. I also plan to use an ignition from a Harley (barrel style key) and am trying to figure out if I can make a full matching lock set. I know I can get lock cylinders that work with the Harley key, however, the problem I am coming up against is trying to figure out how to remove the existing cylinders from the hood and trunk latches. Has anyone tried doing this? The other option that I would have would be to find a 3 position ignition, Off-Acc-On, (no start) and 1 lock cylinder that would match the existing hood and truck key shape. Any thoughts?
