I have read that everyone is adjusting their ride height at about 4 1/2" to 5" . When I put a little spring pressure on the springs at full droop my frame is 10" off the ground if I back the springs any more, won't they rattle when I go over large bumps?

Ride height is measured with the suspension at full compression - i.e., with the car on the wheels on the ground. Measure from the front and rear of the 4" frame rails to the ground.

Depending on spring rates, spring lengths, and ride heights, there are times when the springs will have a bit of free play when the car is jacked by the frame. Generally if you adjust the collars at full droop so the springs have just a little bit of slop or slight tension, the height will end up some where in the normal range you mentioned. Do this, drop it down and measure height. If it's off from where you want it, adjust until you get the height you want. jack it back up and see how the springs are a t droop. Let us know what you discover.

The rear of the car is setting on 14" borrowed wheels and tires while I wait for my 15" from FF5 when I set in the trunk the car sits 8" off the floor with IRS suspension and I am worried that the springs will rattle when the car goes over a large bumps we live in Arkansas and some of the pot holes and dead deer are a problem

For now, just install all the parts and lightly snug the collars against the springs with the suspension at full droop. Likely, in my experience, this will be too tight. But don't worry about ride height until you have the chassis completed, driveline installed, final wheel/tires installed, etc. Then you can set it down on it's own weight and start dialing it in. Follow the instructions on the Koni's where it says to tie-wrap the hats to the springs. This is to keep them from coming unseated. But trust us, the springs aren't going to rattle when you're all done.
