How have others done the riveting of the underneath of the floorpans? The kit comes with 1 sheet metal screw down there and the only way I can see to do it is put one side at a time on jackstands or that and a hydralic jack.

Id say on some good tall jackstands. Well made ones.
Or I put mine on the 2 post lift. Best thing I ever bought.

I did both of my builds with the chassis on jack stands at the highest possible settings. I have an older set of 4 ton Craftsman stands that have nice wide bases, and even at the tallest settings are nice and stable. It's easy enough to get under the chassis to complete the underside rivets when on these stands. Plus your back will thank you for the entire build for getting the chassis as high as possible for as long as you can.
Having said, I too have added a 2 post lift to my garage this past summer. I won't be bending over that much or crawling around on the floor underneath any more. I am simply amazed how much easier everything is with the 2 post. Even putting some wax on my Mk4 the other day, I had it up at a comfortable working height to wax and polish all around the sides and front/back with minimal leaning over. OK, crazy I guess.

I don't remember doing any riveting under the car. The floor pans are done from the top IIRC.
You really should have 4 good jack stands for most of the build.

Tall jackstands or a 90 degree drill work fine.

The front lowered section in each footbox have a couple lines of rivets installed from underneath. Agreed, from there back all are from the top.

Ah! I forgot about those.

maybe I'm not picturing this correctly. Aren't ALL of the floorpan rivets from the bottom?? I'm 99% sure you can't get to them from the top. (ok, if you have the stock PS FB, the front ones could be from inside, but on the DS, the front and side are outside of the FB roundtube from the inside and the back goes into the 2"(?) square tube, doesn't it? The inside (next to the engine) goes sideways into the 4" round chassis frame.
what am I missing?

OK, I went out and looked. 35 degrees in the garage. Not bad since it hasn't been above zero today. (Grr...) The passenger side has rivets from the bottom on all four sides. The driver's side on three sides. The side against the 4 inch tube (accelerator pedal area) is from the inside. That's my story and I'm sticking to it.

I'm the same as edwardb, stick to this method and you will be fine. Its a much cleaner look with the rivet heads on the outside of the panels, I used dynamat xtreme on the inside which covers up the rivet ends nicely. With the carpet in you won't notice any bumps. Would recommend having the chassis up on jack stands during these works for optimum drilling/riveting access.

Maybe its because I got an early Mk4 or something like that, mine has (1) machine screw in the middle rear lip that goes under the frame square tube. Its the same on both sides.
Thanks for all the feedback !

Are you sure that's not just a shipping screw that FFR placed to hold the panel in place when shipped? Similar to all the other panels temporarily hung on the chassis? There's no reason at all for there to be any screws (self-tapping or machine) in those panels. They are completely held in place with rivets and adhesive just like all the other panels.

x2 what edward said. You need to remove the floor pan and mark and drill a row of holes there, to silicon & rivet to the square tube.
post some pics, you're confusing the hell out of me. I thought installing the floorpans were pretty straight forward. (I made another 1/8" flat aluminum pan to mount on top of (of the very bottom) to stiffen up the floor and avoid to "oil canning" when you step in.)
