Anyone look at using plate nuts in place of rivnuts, as I have always had rivnuts either strip out or not hold and turn ?

I use lots of plate nuts - especially on various fabricated pieces for my Roadster. They are used in aerospace and military application widely (Aircraft Spruce a good source). But many applications on the 818 require use of a rivnut in blind locations. There are many different kinds of plate nut. What specific kind of plate nut were you considering?

I have a set of "Boeing boys" that help me and thy wanted to go floating nut plates were I don't have blind spots, like the rear firewall where it attaches to a 2x2 and some of the front firewall area, seems they use them all the time on the planes and not rivnuts (in non blind areas)

I use the plain (non floating - too expensive except for things that move) plate nuts. I hate rivnuts, they have caused me a lot of trouble in the past. I have been drilling through a lot of the tubes like the rear firewall and put a regular nut on the back side. I also use solid aircraft rivets whenever I can get to the backside, a rivet squeezer is a wonderful tool.
I also tap a lot the holes in the frame 10-32 instead of using pop rivets. 32 threads per inch gives 4 threads in 1/8" steel, plenty for the various brackets and tube hangers.
