I am getting ready to drop engine in and I'm installing auto meter gauges , where do the oil temp. Sensors work best, can it go in a threaded hole in the block oil filter relocate piece? Or is there a way to install it in the low oil sensor in the oil pan?

There is an oil filter relocator that has 4 ports and you can put it there. Mike Forte , forum vendor, has an adapter for the low oil port in the pan. Give Mike a call.

Look at your oil pan; you may have a bung already there for the purpose. If not, either of Steve's suggestions is a good way to go. Getting a bung installed in the oil pan would be the most straight-forward route, IMO.

I used the same as above. Screwed in in front of the oil filter and mine has two bungs, one for temp and one for pressure. Simple.

Installed it in the original stock location. Port in the block just forward of the oil filter. Used to be on an extension tube about 2" long

If your oil pan has a provision for one, use it

That's the location for the oil pressure sensor. The OP is asking about oil temp. I have a Moroso pan on my Mk4 build, and the temp sensor bung is next to the dipstick bung in the rear sump. But that doesn't help you much. Quick Google search on multiple forums and overwhelmingly the feedback for a stock pan is to install a bung in the sump. Ideally near the pickup. Takes the proper size fitting and a hole in the pan. Looks like it would be pretty easy.

Unscrew the low oil level sensor from the pan, remove the retainer and pull the guts out of it. Cut it off flush with the slots that the retainer nested in and then tap the internal bore for 3/8-18 NPT (pipe thread). You won't even have to drill it.

Now you can install the bushing and sensor and reinstall it in the side of the pan. Easy!
