Thanks to all who responded to my question on insulation & sound deadeners. Currently, I am thinking of using Sharkhide on all of the aluminum panels, and then EZ-Cool on the inside of the cockpit surfaces. With that in mind, there are now more questions: Approximately how many square feet of EZ-Cool do I need to do those surfaces? Also, is it worth doing the trunk? If so, what does that add in square footage?

2--- 4' x 10' rolls will do all the inside cockpit panels and trunk floor.

Another option is to use RattleTrap sound deadener which is similar to Dynamat but cheaper. Bought mine through eBay and used it on all of the cockpit surfaces, trunk and behind dash. Have used it on other projects and very happy with it. Note that you can now buy it without any logos. A 75 sq ft roll would be enough to do an entire car.

I just ordered some EZ Cool, but wanted some Dynamat type stuff on the floor. I was planning on buying Summit brand/Fat Mat/generic stuff, but Dynamat has a BIG discount going right now:

Rod, you need to check this stuff out. I've used it on many builds. It's great stuff and eliminates steps.

Summit has Dynamat Extreme on sale NOW for $138, free shipping, 9 pieces 32" X 18", I think. This should do the car, as 100% coverage is not required for good effect. Will still need under-carpet conventional insulation, though.
