What, if any, glue are folks using for holding the weatherstripping onto the aluminum panels etc?

You need to be a little more specific. What weatherstripping and onto what aluminum panels? There actually isn't that much weatherstripping used in these builds, and any I've used either were self-adhesive (e.g. had a peal-off paper backing and you press it on) or clip on like the bulb seal that clips over the edges of several panels, around the trunk opening, etc.

The full kit came with a couple different types of weatherstripping -- a long roll of rubber strip made of a tube about 1/2" diameter with a narrow u-shaped flap projecting vertically from the tube -- I figure this is the strip that slips over the thin aluminum like the sides of the trunk. I also have a piece about 10' long made from a smaller rubber tube about 3/8" diameter with a flap with the long side joined to the rubber tube, about 8' of strip with a square U-shape profile, and a long long roll of soft grey foam with sticky on the back.
So - which strip goes where, and is glue required? Dumb question, I know, but I want to get this right....

Snaps into place but I usually give them a rivet at each end., and a long long roll of soft grey foam with sticky on the back Sounds like the door seals. Do yourself a favor and get the self adhesive "D" shaped weatherstripping from Mike Everson for the doors and hood.
So - which strip goes where, and is glue required? Dumb question, I know, but I want to get this right....

No dumb questions here. Jeff covered it. x2 on the D tube material from Mike Everson. Works great on the doors and some guys use on the hood as well. Good luck with your build.

If you need adhesive, I like 3M Gasket and weatherstrip adhesive.
Make sure when installing the strip, make it exactly where you want it the first time.
The 3m is tenacious.
