Shorty Header Install

I'm planning to install my shorty headers tomorrow night and have a couple of questions:

1 – which side of the gasket (flat or puffy) faces the engine?
2 – What should I torque the bolts to? I don’t know if I will be able to fit my torque wrench on all bolts.
3 – Should I use locktite (red or blue)?

Any help is appreciated.
