I have dual edelbrocks on a 302 with a crane thumper cam. It took a wile to get the idle, hesitation and acceleration sorted out but not anymore than I have done with Holleys. I have the exact same setup on a 354 hemi in a 35 pickup that has worked well for years. Now the problem is, it accelerates like mad, idles great, but at a steady throttle it runs rough if there is no load. Goingup a hill is fine but just tooling along or coasting, it runs like s*&%#. Any suggestions besides buying new holleys?

not familiar at all w/ Edel carbs but a couple of us have been having something similar w/ Quickfuels and BGs. Using a LM1 wide band sensor I found that the idle circuit on my Quickfuel was way lean between 1100 and about 1600 at a steady throttle. When I first got into all this 4 barrel carb stuff, I was surprised to learn that the idle circuit has a large effect as high as 2000 rpm and especially important at the tiny cruise throttle openings we use w/ a light car and big engine. The fix for me was a much larger idle feed restrictor. I think Edels have a much different setup but maybe this will lead you to a fix anyway. BTW, talking w/ the Quickfuel tech line, the guy suggested a test of opening all the idle mix screws 1/4 turn and driving it. Then try another 1/4 turn. that is what convinced me it was the idle circuit. Of course, doing that messes up the idle, but ignore that and concentrate on your problem area. It's an easily reversible test.
